I am known as THE Traveling Salesman. I used to work six NorthWest States as a Mfr. Rep in the Promotional Products industry. I have eaten at trucks and wagons across the Western USA. Currently, I am doing a different gig that has me up early and out late every day. I drive 6-7 thousand miles a MONTH in the Central San Joaquin Valley from Turlock to Stockton.
I have seen a new (to the North) mid-size taco wagon with lights and a gas grille.
I also have my own ideas for a food cart, but lack the $15,000 to make it happen.
I have seen some other trends out there, but that's for another discussion.

Great idea. Let's start a food revolution and put the money in the hands of chefs/producers and take the money out of the hands buildings, managers, and waiters. Traditional business models must change, make it about the food.
