One of my most memorable experiences was learning to make papusas with Maria while visiting the Alemany Farmer’s Market in San Francisco. These flat griddled delights are made out of masa paste, filled with anything from cheese to veggies, and cooked on a well oiled flattop. Que bien!
Maria is part of great nonprofit called La Cocina which helps start-up vendors transition from cart to brick and mortar. I’m really proud to know Caleb Zigas, who founded and runs the program. Their work is fantastic. Learn more at lacocinasf.org and consider supporting them.
