Taco Crawl w/ Dylan Ho (Los Angeles, CA)

One evening I met up with my buddy Dylan Ho of Eat Drink ‘n Be Merry in Los Angeles for a delicious taco crawl. We visited three of his favorite taco tables, and feasted on everything from lengua tacos to squash blossom quesadillas. My personal favorite was the cabeza, which is made of the cows cheek muscle. Tender, juicy, and super flavorful!

  1. Now I am craving Tacos. You didn't get Huitlacoche, they're delicious (also considered a veggie since it's the fungus that affects white corn, and it's very tasty).
    When properly prepared, the squash blossom is a delicacy not only on tacos.

    Good show.

    I'm kind of a taco purist (some may say snob) but I like chipotle marinated carne asada, grilled, chopped up and finally griddled. In two small corn tortillas griddled, with raw red onion, fresh made salsa verde, finely chopped cilantro and PLENTY of fresh lime squeezed over the top.

    Equally good is cabeza, if I'm looking for something a little more tender. In which case I also add finely chopped cabbage.

    Yea man, the crunch of the cabbage sure does wonders to balance the
    really soft texture that can come from cabeza. Alternately, Ive had
    situitations where they griddle the already cooked cabeza, adding
    brown, carmely bits on the meat, which too ads to the textural
    diversity.

    I'm nostalgic and partial to the homemade tacos we had growing up as a family for “taco nights” with all the fixings.

    There are a ton of good taco places in South Philly, but if you want one to check out go to Honest Tom's on 33rd Street. It's really cheap and they have a bunch of different kinds of tacos, including a scrambled egg one and a sweet potato one.

    ghee since Halloween is coming I think my favorite stuffing on the moment is Chicken, pumpkin, coconut milk, and chopped coriander.
