Kulfi with protein powder

Ingredients

       500 ml milk

       4 scoops whey protein powder (vanilla)

       300 g grated pumpkin

       ¼ tsp cardamom powder

       3 tbsp almonds

       10 – 12 saffron threads

Method

       In a thick bottom non-stick pan heat milk and grated pumpkin till it becomes soft. It’ll take around 20 – 25 minutes. Keep stirring occasionally.

       Once the mixture is thickened, allow it to cool.

       Add protein powder to the mixture and blend well to make a smooth paste.

       Add chopped almonds, saffron, and cardamom powder and mix well.

       Pour into kulfi moulds and refrigerate for 6- 7 hours or overnight.

       Garnish with almonds and enjoy!!

Ingredients

       1/3 cup coconut/ almond/ oats flour

       1/3 round flaxseeds

       1/3 cup milk (you can use almond/ cashew/ soy milk as well)

       ¼ tsp baking soda

       1/3 cup yogurt

       ½ mashed banana (you can use 2 eggs as replacement)

       1 tbsp vanilla extract

       Pinch of sweetener – jiggery powder, stevia etc.

       Spice mix – nutmeg, cardamom, ginger powder

Method

       Mix flour, protein powder, ground flaxseeds, and baking soda in a bowl. Add spice mix to the mixture and mix well.

       Next add milk, yogurt, mashed banana, and vanilla extract and blend to get a smooth paste.

       Add dry ingredients to wet ingredients and blend again to get a smooth lump-free mixture.

       Heat a non-stick pan and brush it with oil.

       Pour pancake batter and cook on both sides until golden brown.

Ingredients

       ¾ cup almond milk

       1 serving whey protein

       1.5 tbsp chia seeds

       I tbsp cocoa powder (if you want to make chocolate pudding)

       1 tbsp chocolate chips

       A pinch of sea salt

Method

       Add almond milk, whey protein powder, cocoa powder, and chia seeds into a blender jar and mix well.

       Scoop out in a bowl and let it chill in the refrigerator for 1 hour.

       1 cup pumpkin puree

Method

       Preheat the oven at 180 C and line the muffin tray with muffin liners. Ensure muffin tin is greased well.

       Mix all the ingredients – pumpkin puree, almond/ peanut butter, protein powder, cocoa powder, and stevia in a bowl and mix well.

       Pour brownie mix in muffin moulds and tap lightly.

       Bake for 12 – 15 minutes or until a skewer comes out clean.

       Allow to cool for an hour and relish these yum protein bites

Protein Ladoo

Ingredients

       20 g whey protein powder

       20 g whole wheat flour (you can also use oats flour, ragi, or any other flour of your choice)

       1 cup water

       1.5 g ghee

       10 g jaggery

       Desiccated coconut for garnishing

Method

       Pour one cup water in a pan and bring it to a boil. Then add jaggery and mix well until it melts. Turn off the flame.

       Heat ghee in a non-stick pan and add whole wheat flour. Keep stirring for 5 – 10 minutes or until it turns golden brown. Add whey protein and liquid jaggery and mix well to form a smooth mixture.

       Take a small amount of mixture in your hand and make bite sized ladoos.

       Garnish with desiccated coconut, allow them to cool and gorge upon these delicious and healthy laddoos!
